Delicious any time of the year: Nachos with a Twist!

Idea #1 - Quick Swap

Bump up the flavor of your regular Nachos by swapping out the tortilla chips and using Doritos instead! My house likes to go classic Nacho Cheese but Ranch or Flamin’ Hot might be great too.

Idea #2 - Breakfast Nachos

Like a good hearty breakfast burrito, Breakfast Nachos make a great start to your day. Here’s the general idea which you can customize to suit your family’s palate and preferences:

  • Tortilla chips as the base - toasted a bit is best but out of the bag works too
  • Top with dollops of
    • Refried beans (warmed)
    • Scrambled eggs (or scrambled eggs mixed with chorizo)
    • Cheese
    • Mild pico de gallo or salsa

If you have never cooked with chorizo but want to give it a try, this is a great opportunity! Crack 3 or 4 eggs in a bowl and mix them as you would for scrambled eggs. Set them aside. In a pan heat a small amount of oil and then about 2 or 3 inches worth of chorizo on medium heat. (It sometimes splatters so don’t be in your best white blouse.) Using your spoon or spatula, break the chorizo up and you will see that about half of it dissolves and mixes with the oil. Let it cook for a minute or two and then add the eggs you have prepped. Stir everything up in the pan, cooking it as though they were “normal” scrambled eggs. That’s it!

Chorizo won’t add a lot of substance to your eggs but it will add a lot of flavor. Traditionally, pork and beef are used in chorizo but you can now also get turkey and maybe even a veggie option depending on what store you are at.

Idea #3 - Make it a Meal French Fry Nachos

I was at Sofi’s Mexican Restaurant by Harbor Freight on Bell and ordered this for brunch one Sunday. It was really good so I thought I would share the idea with you.

Sofi’s twist was to take out the chips and put in French Fries. How can you go wrong - Nachos AND french fries?!? As you can see in the photo, she topped it with meat and then went with the colors of Mexico - Green guacamole, Red pico de gallo, and White sour cream. A little bit of cheese tops everything off and I bet it would be just as yummy with shredded rotisserie chicken instead of beef if that’s what you have in the fridge.

These are “Nacho” average Nachos! Hopefully they will be a fun change from what they expect when you say Nachos are on the menu.
